Sloppy Joes


I made the Sloppy Joes today for Sarah's birthday lunch. They were 100% easy, and wonderful! I'm sure they were a calorie bomb! Juergen and I ate two of them, and Nicole had 3. Surprisingly the boys didn't like them. Maybe it was the new texture? Believe me they were too good!!! If you want something fast and good, and you are not too worried about zipping your pants up Sloppy Joes is a winner!

BTW...I added refried beans and cheese to Jennifer’s Recipe. I used less BQ sauce (1/2 cup) and instead added half a cup low sugar ketchup. Because I used beans in the dish the dish could have been lower in fat. I added cheese so that basically defeated that fat savings!

    3 ½ C Unbleached Flour
    1 T yeast (instant)
    ¾ tsp salt
    Combine the first 3 items and stir thoroughly. In a smaller bowl, stir together the wet ingredients. Add wet to dry and mix at medium speed until elastic, about 5 minutes.
    1 ¼ C hot water
    2 tsp honey
    1 T olive oil
    Add wet to dry and mix at medium speed until elastic, about 5 minutes.
    If dough is too sticky, add a little more flour.

    Turn out dough onto a floured surface and knead. Shape into a ball and invert a bowl over the dough and let rise until double. About 30 minutes, depending on the temperature. Punch down and let rest 10 minutes while you prepare you pizza pans.
    Toppings:
    2 small cans tomato sauce (season with Italian herbs and garlic powder plus some red pepper flakes if you like some spice)
    1 lb. mozzarella cheese
    Pepperoni, sausage, ham, etc.
    Olives, green peppers, mushrooms, onions (sautéed a bit)
    Bake at 425’-450’ until the crust is brown but the cheese isn’t too dark.
