Welcome to the Hungry for love 2009 cook book contest!




Hi, We have a family of 7. We live on one income. I need good family recipes I can use everyday. They need to be simple, easy, taste good, and be inexpensive to make. I want them to also be healthy. So what do I do? I am going to run a cooking contest. You send me your best everyday family recipes. My family will act like the test kitchen. I'll post the recipes we try on this blog. The best recipes I will publish in a book. I'll sell the book as a fundraiser for orphans (I have not decide what cause will get the money). I also want to profile adoptive families in the book. You don't need to be a adoptive family to enter (I just changed my mind about this rule). The grand prize for the best family recipe will get 12 prizes. Each month I will buy a prize for the winner of the contest. This month the prize is a great book called "Chicken Soup for Adopted Soul". It is a collection of stories that celebrate adoption. I'm half way through this book. I love it! I'll order a new copy to put in the package for our winner. So what do you think? Do you have one thing you always cook for your kids? Send me your recipe and I'll give it a try. It needs to be easy, healthy, cheap, and good. We are not looking for fancy food…just good everyday cooking.

French Toast

Ingredients:

2 eggs
1 cup low fat milk
1 tbsp vanilla extract
1 tbsp white sugar
1/4 tsp salt
6 pieces day old French bread, cut 3/4″ thick or whole wheat toast
1/8 tsp nutmeg or cinnamon
1/2 tsp vegetable oil

Directions:

Beat eggs lightly in a shallow pan.
Whisk in milk & vanilla.
Add sugar, salt & nutmeg or cinnamon. Whisk until smooth.
Soak bread for approx. 30 seconds per side. Remove &
allow excess to drip off.
Heat oil in a hot skillet. Add bread and cook until
golden brown, 45-60 seconds per side.
Dust with icing sugar and serve immediately with your
favorite topping. We like apple sauce or yogurt as a topping.
For our family of 7 we double this or even triple this recipe, but I don't add as much milk or sugar. I made this for my family last night. It took 10 minutes and cost maybe $5.00 for my family of 7. I need a book of easy recipes just like this!
