BANANA MUFFINS

BANANA MUFFINS
1/2 c. butter, at room temperature
1 c. sugar
2 eggs
1 c. flour
1/2 c wheat germ
1 tsp. baking soda
1 tsp. salt
1 c. mashed very ripe bananas
1/2 c. sour cream
1 tsp. vanilla
1/2 c. chopped walnuts or pecans (optional)

Preheat oven to 350 degrees. Cream butter, sugar, and eggs. Sift the dry ingredients and combine with butter mixture. Blend well. Add bananas, sour cream and vanilla; stir well. Stir in nuts and pour into a well-buttered 9x5x3 inch loaf pan or several smaller ones. Bake 1 hour. Turn out onto a rack to cool.
