A super fast bean soup




I'm still waiting for this blog to catch on. Well, I hope it does catch on! I'm cold and I love soup. Tonight I am cooking a very fast bean soup. You use two cans of refried beans and one chopped onion, and a jar of spaghetti sauce that has only vegetables and spices (no meat) and 2 cups of cooked rice. You fry the chopped onion in olive oil until golden, then add everything else with some water. Let it cook to a boil. You can serve it with chips, or cheese , or sour cream on top. You could dip a good sour dough bread in it. It is fast and good! If you want to make it from scratch (no canned stuff) then it is not so fast because it takes hours to cook beans. I'll figure out the scratch recipe for you. I think you can cook beans pretty fast in a pressure cooker.
